Welcome!!

Hi! We are the Plunks: Jennifer, Jeff, Matthew and Maddie! Welcome to our blog. I started this blog to chronicle our service dog adventure, but it has evolved into a place for me to jot down my thoughts... about autism, parenting, family, working, but mostly about celebrating life and the God who gifted us with it. Enjoy the ride!

Friday... I think. Day 5 at the Beach

A morning run with a rainbow at my side... over the ocean.  Really?  God is so faithful and so amazing.  To think I have such an awesome family to come home to after I run!

Today's breakfast was my most favorite... fresh fruit, homemade granola that I made!!, and greek yogurt.  To.Die.For.  Today's fruits were peaches, kiwi and strawberries.  It's a beautiful dish, but it tastes even better than it looks.  Both kids LOVED it too... in fact, Matthew ate all of his and what was left of Maddie's when she got full.

Today was a pretty low-key day, other than realizing that Matthew's phone has gotten lost (not irresponsibly - we think it must have fallen out of his pocket).  SO, Jeff was bound to dry land today waiting on call backs from Verizon and the movie theater while were enjoying the water.  Today's waves were the best yet, and the kids had a blast in their tubes.  It's typically very calm here, but the storms have generated some decent ripples today.

After the beach, we had lunch (more salads and grilled cheese, this time with grapefruit and clementines) and then went REAL grocery shopping again.  We're buying lots of fresh fruit and salad fixings so we have to replenish once a week.  Plus we needed hamburger buns and other stuff for tonight's anticipated dinner:  Chef Jeff's grilled burgers and baked beans, complete with fresh mango and cucumbers.  While Jeff grilled, we practiced our songs (trying to be more quiet this time since the people from upstairs complemented our singing from last time - oops.)

We watch some more Cake Boss with the kids - amazing how much the show has changed over the years!  We've decided a lot of the early yelling and mishaps were for ratings/show.  Nevertheless, we're enjoying it and the kids love it.

I didn't get to read enough to suit me today, but that's OK.  It was another truly great day. We are truly blessed to be on this vacation together...
